When I think of summer desserts, what immediately comes to mind??

For me, it’s sweet and fresh fruit cobblers with flakey buttery biscuit topping. With a scoop of vanilla bean ice cream, but of course!

I know, I know… we have to turn on the oven in order to make them happen, but the fresh seasonal fruit with buttery, delicious topping with a scoop of vanilla ice cream is the winningest dessert you could possibly share with friends and family.

You may have seen my Gluten-Free Vegan Peach Cobbler a few years ago, and the concept is very similar here. 

The main difference is we’re making a paleo-friendly grain-free topping using almond flour, rather than using gluten-free all-purpose flour and oats.

The almond flour biscuit topping is perfectly sweet and flaky and tastes rich and buttery even though it’s grain-free and dairy-free.

All things considered, this peachy delight is actually pretty healthful! Eat it for breakfast, no one’s watching!

I don’t add a ton of sweetener (in this case, pure maple syrup) to keep it lower on the glycemic index than a standard cobbler, as peaches are already quite high in natural sugar.

Before I get ahead of myself, let’s chat about the short list of ingredients.

Ingredients for Paleo Peach Cobbler:

Peach Filling: Fresh ripe peaches, pure maple syrup, tapioca flour, lemon juice, sea salt. The tapioca flour ensures the juices that seep out of the peaches during baking become nice and thick so that the filling is spoonable and luxurious rather than watery. You want your peaches to be nice and ripe, but ever so slightly firm so that they don’t disintegrate on you.

Cobbler Topping: Almond flour, coconut oil (or unsalted melted butter), pure maple syrup, almond extract (optional but encouraged), ground nutmeg (optional), and sea salt. The almond extract and nutmeg aren’t mandatory, but they sure do add a unique and tasty essence to the topping!

Let’s make it already!

How to Make Paleo Peach Cobbler:

Make the Filling: Toss the ingredients for the peach filling in a mixing bowl until well-combined.

Prepare the Cobbler Topping: Stir together the ingredients for the cobbler topping in a mixing bowl until a thick dough forms.

Make the Cobbler: Preheat the oven to 350 degrees F. 

Transfer the peach filling to a 8” x 8” of 9″ x 9″ baking pan. 

Toss the ingredients for the peach filling in a mixing bowl and then transfer to a small casserole dish

Form 6 to 8 disc-shaped biscuits out of the cobbler topping dough and arrange them on top of the peaches.

Form biscuits out of the almond flour topping and place on top of the peach filling

Bake on the center rack of the preheated oven for 30 to 40 minutes, or until the topping is golden-brown and the peaches are nice and soft and bubbly (I do 35 minutes).
