Keto Fudge Brownies - moist, decadent, rich, delicious fudgy sugar-free brownies made grain-free and absolutely divine!

I took the concepts from my Espresso Keto Brownies and my Fudgy Keto Brownies and juiced them with chocolate growth hormone to…well…make them even better.

Let’s get straight to the details!

Ingredients for Triple Chocolate Keto Brownies:

For the Brownies:

  • Baker’s Chocolate – unsweetened chocolate bars you find in the baking aisle
  • Butter (or ghee or coconut oil…butter recommended)
  • Almond Flour to help form a cohesive brownie.
  • Instant Espresso Powder (or instant coffee). This is optional, so no worries if you don’t have it on hand)
  • Sugar-Free Brown Sugar (or granulated sweetener of choice)
  • Sea salt to enhance all the flavors and make it extra special
  • Eggs – best if you bring them to room temperature before baking the brownies, but no worries if they are still cold.
  • Sugar-Free Chocolate Chips – because we excel at life. Actually, the chocolate chips are optional but very much recommended if you’re trying to optimize your death by chocolate experience. 😉

This combination makes for an ultra rich sugar-free fudge brownie that will hit all the right spots!

For the Ganache:

  • Full-fat canned coconut milk
  • Sugar-free chocolate chips
  • Butter – or ghee or coconut oil

You can use your favorite flavor of sugar-free chocolate chips or use a sugar-free chocolate bar (just make sure you have 1 cup of chocolate).

This combination yields an incredibly rich, melt-in-your-mouth ganache that when combined with the fudgy brownies will leave you speechless.

Let’s bake them already!

How to Make Death By Chocolate Keto Brownies:

Preheat the oven to 350 degrees F and line a 8″ x 8″ baking pan with parchment paper.

Melt the butter and bakers chocolate in a small saucepan over medium heat, stirring frequently, until completely melted. Note: this process will be quicker and easier if you chop the chocolate bars first.

Melt the butter and chocolate in a saucepan

Stir in the vanilla extract, almond flour, sugar-free sweetener, espresso powder and sea salt until very well combined.

Stir in the almond flour, sugar-free sweetener, instant espresso and vanilla

In a separate bowl or measuring cup, whisk the two eggs very well until completely combined. Pour the beaten eggs into the saucepan with the brownie mixture and mix well until very well combined. Note that the brownie batter will look grainy and greasy. This is normal!

Whisk the eggs and add them to the brownie mix

Stir in the chocolate chips until combined.

Transfer the brownie batter to the prepared baking pan and smooth into an even layer. Bake for 18 to 22 minutes, or until the brownies are very bubbly around the edges. Note: they will not look cooked, but they are!

Allow the brownies to sit and cool for at least 15 minutes. The butter will reabsorb and after a couple of minutes, they will look like normal brownies.

Transfer the ingredients for the ganache to a microwave safe bowl and microwave for 20-second intervals, stirring well in between, until melted, about 60 seconds total.

microwave the ingredients for the ganache

Pour the ganache over the brownies then transfer them to the freezer for 30 minutes. This will allow the ganache to set up.

Pour ganache over the brownies

Pull the brownies out of the pan and place them on a cutting board. Slice and serve!

Can I Make These Dairy-Free or Vegan?:

Yes! I will caution you, I like the recipe as it is written below the best. However, you can make the recipe dairy-free or vegan very easily.

Simply replace the butter in both the brownies and the ganache with coconut oil (or vegan “butter” spread) and be sure the baker’s chocolate and chocolate chips you use are vegan.

You can replace the eggs with two flax eggs. To make two flax eggs, combine 2 tablespoons of ground flax seed and six tablespoons of water in a small bowl or measuring cup and mix very well. Allow this mixture to sit for at least 15 minutes, stirring occasionally, until it thickens to the consistency of beaten eggs. Proceed as normal!

Can I Make These Non-Keto?:

Yes! If you don’t follow a low-carb ketogenic diet, feel free to make the following changes:

Replace the sugar-free sweetener with regular brown sugar. Use regular chocolate chips for both the brownie batter and the ganache instead of sugar-free chocolate chips.

Triple Chocolate Keto Fudge Brownies are absolutely divine!
