30-Minute Teriyaki Beef and Zucchini comes together lightning fast and is easily one of those meals you can put on repeat every week. Arguably the best part? It only requires 5 ingredients! Make it a part of your meal prep routine, or throw it together any weeknight after work.
Going out to eat as a kid, if there was something teriyaki on the menu of any restaurant my family went to, I was ordering that teriyaki.
As an adult, I make teriyaki everything. Baked Teriyaki Chicken Thighs, Teriyaki Salmon, Teriyaki Turkey Meatballs, 30-Minute Teriyaki Beef Skillet, 30-Minute Teriyaki Chicken Stir Fry are equally amazing in my heart.
My love for teriyaki knows no bounds, and you know what? This 30-Minute Teriyaki Beef and Zucchini may be my latest favorite teriyaki recipe.

- Only 4 ingredients are involved in this adventure. Easy eating at its finest.
Ingredients for Teriyaki Beef and Zucchini:
Steak: The main event here! Pick up your favorite steak to cube up for this teriyaki recipe. I use grass-fed New York Strip but almost any steak will work. Stick with the tender cuts for the best tasting result, and if you end up using a less tender steak, simply marinate it ahead of time with the teriyaki sauce and sea salt to improve its texture.
Zucchini: The supporting ingredient here. Fresh zucchini is abundant this time of year, and it happens to taste AMAZING when dressed up in teriyaki and also pairs fabulously with beef!
Red Onion: Livening up any meal, red onion offers a great deal of flavor and complements the teriyaki flavor.
Teriyaki Sauce: One of those go-to sauces that just turns any meal into a dreamboat. Store-bought Paleo Teriyaki Sauce https://amzn.to/3y3NdAt or my homemade Paleo Teriyaki Sauce https://www.theroastedroot.net/paleo-teriyaki-sauce/ recipe are my go-tos, but you can use your favorite teriyaki!
Sea Salt: Party alert! Sea salt brings all the fun to the dish and bumps up the flavor. Salt the meal to taste in order to please your palate.
Meal Prep Tip:
Want to marinate everything in advance for optimal flavor? Simply add all of the ingredients except for the zucchini to a zip lock bag, seal it up, shake it around, and refrigerate it until you’re ready to cook. This will generate the most amazing flavorful beef, but it certainly isn’t mandatory.
How to Make Teriyaki Beef and Zucchini:
Add all of the ingredients to a large skillet and heat to high. Cook, stirring occasionally, until most of the liquid has evaporated, forming a thick sauce around the food and the food begins to caramelize, about 20 to 25 minutes total.
Taste the teriyaki beef for flavor and add more teriyaki sauce and/or sea salt to taste.
Serve over rice or with choice of sides.
What Kind of Beef Should I Use for Teriyaki Beef?:
Steak! I always say pick your favorite, but I tend to use steak that has a decent amount of fat marbling for flavor. New York strip, ribeye, and even fillet mignon is a great choice. You can also use sirloin steak or stew meat, but for those cuts I would recommend chopping and marinating the meat in teriyaki sauce ahead of time to ensure it becomes nice and tender.
